21 Ti Adelaide Martin, managing partner of Commander's Palace, is the daughter of Ella Brennan of the respected Brennan restaurant family of New Orleans. "I'm a restaurant brat!" exclaimed Martin. "I was raised in the business and around food," she continued. Because of that fascinating upbringing, the bubbly author, cook, and innovative recipe creator speaks to the masses about New Orleans' favorite subject: sumptuous, unrivaled cuisine and its elegant presentation in the iconic restaurant. "Commander's Kitchen" was Martin's first published cookbook and was nominated for the James Beard Award. Large and splen- did with mouth-watering photographs, the 333 pages are filled with 150 reci- pes developed and tested by Chef Shannon and Martin, each accompa- nied by charming mini-histories penned by Martin, lending a coziness to the volume. "When we were putting this book together we coordinated with the pub- lisher who shot down our opening the book with recipes featuring our renowned cocktails, stating that the book was not about drinks. I readily informed him that in New Orleans, we always begin the meal with an entic- ing cocktail at Commander's Palace. I prevailed in that argument and am pleased that my recipe, Brandy Milk Punch, appears first on page 3," relat- ed Martin with a laugh. Martin has also written a book about New Orleans cocktails and their place in fine din- ing. It would be an unreasonable request to choose a favorite recipe in "Commander's Kitchen" as every pal- ate is addressed. With attention to preparation combining crucial ingre- dients, cooks will proudly turn out spectacular fare. The recipes, though grand, are not intimidating to non- professionals and homemakers.
